Rainbow cake

Everybody loves birthdays! I especially do when it’s not my own because I enjoy making people smile and happy. So what is better than baking a colourful and tasty cake for a dear friend’s birthday? This cake (with its exciting appearance and even more spectacular look when you cut out the first piece) is perfect for birthdays, gay prides or other fun occasions.

Ingredients

For the dough:

  • 200 g sugar
  • 300 ml oil
  • 150 ml milk
  • 150 ml sparkling water
  • 450 g flour
  • 1 pack of baking powder
  • 6 eggs
  • Food colour (purple, blue, green, yellow, orange, red)

For the ganache (chocolate cream)

  • 400 g cream
  • 400 g white chocolate
  • Whipping cream stiffener

And

  • Orange juice
  • Colourful sprinkles for decoration

 

Let´s get started!

Beat the eggs and the sugar until the mixture is foamy and has at least doubled in size. Mix the milk, water and oil thoroughly under the egg mass. Now add all the dry ingredients and stir carefully until no flour lumps are left. Then divide the dough into six portions and colour with purple, blue, green, yellow, orange and red food colour.

Fill each dough individually in 20 cm baking molds and bake each of them for 15 min at 160°C. After baking let every layer of the rainbow cool down completely.

In the meantime you can prepare the ganache.

First heat the cream in a pan. Then turn off the stove and add the chocolate in small pieces. Pull the pan from the heat and leave it for one or two minutes. Stir until no chocolate pieces are left and a homogeneous chocolate cream is produced. Let the cream cool down to room temperature and then put it in the fridge. After it has cooled down, whip the cold chocolate cream briefly with a blender. (Add some whipping cream stiffener if the cream is too liquid)

Place the purple layer on a plate and soak it with some orange juice. Then spread some of the cream smoothly and evenly on the first layer of the cake. Repeat this procedure with every colour (2nd blue, 3rd green, 4th yellow, 5th orange, 6th red).

Now cover the whole cake with the rest of the chocolate cream and make sure you have an even surface.

For decoration, sprinkle the sugar sprinkles all over the cake. (Might get a little messy but it´s good fun)

 

Enjoy this lovely rainbow cake and all the happy faces when the first piece is cut.
